With extra time spent at home and little people snacking at an all-time high, I thought I would share our favorite easy, no-bake cookie recipe. This cookie or all-natural protein ball if you will, is so versatile and can be made to suit the taste-buds of all your favorite Food Explorers! Beyond how simple it is to make, I love that it is filled with protein, fiber, and healthy fats that keep my favorite snackers satisfied for hours.

These cookies also make for a great learning “snacktivity.” Having your kiddos help in the kitchen is beneficial for so many reasons. Not only is it an entertaining pastime, but it’s also an empowering, hands-on learning experience that teaches life skills and encourages more adventurous palates. Let them get creative while getting their hands in the mix!

  • Pouring
  • “Pressing the button”
  • Mixing
  • Choosing mix-ins
  • Rolling
  • and the best part… Taste-testing!

Pour cashews and oatmeal into a food processor.

Blend until a smooth flour is formed and then transfer to a bowl to add your maple syrup, vanilla, and mix-ins.

Everyone can pick their favorite mix-ins and roll their own!

Try different combinations such as:

  • Cardamom + dried mango bits
  • Yogurt chips + craisins
  • Pumpkin pie spice + dried apple bits
  • Dipped in melted chocolate + chopped nuts
  • Candied ginger + lemon zest
  • Swapping out the vanilla for almond extract +  lemon zest + poppy seeds
  • Swapping out the vanilla for almond extract +  sprinkles for a “birthday cake ball”
